In a medium bowl, whisk together almond milk, spices and vanilla.
Stir in chia seeds and transfer to an airtight container. Let sit for 5 minutes, then stir again, making sure chia seeds are evenly distributed throughout.
Allow pudding to rest in the refrigerator for at least 12 hours. Serve topped with your favorite fruits and nuts.
