1 1/4 cups pumpkin puree (or 1 1/4 cups canned)
1 1/4 cups SOY DREAM® classic original organic soymilk
1 cup brown sugar
3 eggs
1 tbsp molasses
3/4 tsps cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/8 tsp ginger
1/2 tsp salt
1 pie crust prepared 9-inch (uncooked/unfrozen)
  1. Preheat oven to 375° F.
  2. Combine SOY DREAM Classic Original and brown sugar in a small pan, heat; do not boil.
  3. Combine pumpkin, eggs, molasses, spices and salt in a bowl.
    Slowly pour SOY DREAM Classic Original mixture into pumpkin puree, stirring constantly.
  4. Pour into the pie crust and place in oven.
  5. Bake for 45 minutes to one hour. Pie is done when knife inserted into center comes out clean.
  6. Let pie cool for at least 25 minutes before serving. Top with SOY DREAM French Vanilla Frozen Dessert.
